Citrus

Essentially used on the Mediterranean coast, the citrus fruit remains a rather capricious species which can only flourish and bear fruit under certain well-defined conditions: no frost, light and well-improved soil, protected from the wind. The most used are the lemon tree, the orange tree and the clementine tree. Recently, certain varieties have become fashionable, in particular the caviar lemon.
